LEMON-HERB CHICKEN QUINOA POWER BOWL

This Lemon-Herb Chicken Quinoa Power Bowl combines 38g of protein + 10g of fiber with wholesome carbs, healthy fats, and plenty of colorful vegetables.
Perfect for meal prep and busy weekdays.

INGREDIENTS — 4 SERVINGS
Chicken
  • 1 lb boneless, skinless chicken breast
  • 1 tbsp olive oil
  • Juice of 1 lemon
  • 1 tsp dried oregano
  • 1 tsp dried parsley
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
Bowl
  • 2 cups cooked quinoa
  • 4 cups leafy greens
  • 1 cucumber, diced
  • 2 cups roasted vegetables of choice
  • Fresh parsley, optional
Lemon-Herb Dressing
  • 2 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp dried oregano
  • 1 tsp dried parsley
  • 1 small garlic clove, minced
  • Salt and pepper to taste
METHOD
  1. Preheat oven to 400°F.
  2. Toss chicken with olive oil, lemon juice, herbs, garlic powder, salt, and pepper.
  3. Roast chicken for approximately 20–25 minutes, or until the internal temperature reaches 165°F. Let rest before slicing.
  4. Roast your vegetables with a little olive oil, salt, and pepper until tender and lightly browned.
  5. Whisk together the dressing ingredients.
  6. Divide quinoa, greens, cucumber, and roasted vegetables between 4 containers or bowls.
  7. Top with sliced chicken and drizzle with the lemon-herb dressing.
  8. Add fresh parsley and extra lemon if desired.
