Grilled chicken, edamame, cucumber, avocado, peas, leafy greens, and a creamy herb dressing create a fresh, make-ahead lunch that is full of color and texture that can help you hit your macros with something healthy.

Recipe:
- 1 1/2 lb cooked chicken breast, sliced
- 2 cups shelled edamame; 6 cups mixed greens
- 1 large cucumber, chopped; 1 cup peas
- 1 avocado, sliced
- 3/4 cup Greek yogurt
- juice of 1 lemon
- 1/4 cup parsley
- 1/4 cup basil
- 2 tbsp chives
- 1 tbsp olive oil; 1/2 tsp salt; 1/4 tsp pepper.
1. Blend yogurt, lemon juice, herbs, olive oil, salt, pepper, and 2 tbsp water until smooth.
2. Toss greens, cucumber, peas, and edamame with dressing.
3. Divide among bowls and top with chicken and avocado.
